"sfinci" DI SAN GIUSEPPE
Ingredients:
½ l. water
gr.
lard 350 gr. 500 flour
No 15 eggs ½ teaspoon baking soda
salt to taste Oil for frying
3 Kg ricotta
gr. 300 gr chocolate powder
. 300 gr candied orange peel
. 300 gr pumpkin
. 250
vanilla sugar
Boil water with the lard and a pinch of salt. Remove from heat, add the flour, eggs incorporate them one at a time, stirring constantly. Allow to stand for two hours and fry spoonfuls of mixture in hot oil.
To get them to inflate you should beat them with a wooden spoon while frying.
Drain "sfinci" and, meanwhile, mix the ricotta with the sugar and vanilla and allow to rest for about an hour.
Pass the ricotta through a sieve and add the powdered chocolate, candied orange peel and the pumpkin into pieces.
fill with this cream "sfinci" and put on a little 'with ricotta and candied fruit.
